Sardines in tomato sauce
750g tomatoes
150g potatoes
200g coconut milk
1 can sardines in tomato sauce
¼ teaspoon turmeric
¼ teaspoon chopped cayenne pepper
¼ paprika powder
2 cloves garlic
pinch of ground nutmeg
salt and pepper
oil for baking
Preheat oven to 200 C. Cut tomatoes in half, season with salt, pepper and nutmeg, add oil and garlic cloves. Put in the oven for 20-25 minutes.
Meanwhile boil the potatoes.
Using hand blender puree tomatoes and potatoes with the coconut milk until smooth. Add the pieces of sardines and serve.
